Goan Pork with Potatoes
You may well call this a simple vindaloo. It has the pork, the garlic, the chillies and the vinegar, but all in gentle proportions. It is a superb dish that is best enjoyed with plain rice. I like to use small red potatoes here, though any waxy potato will do.
Serves 4
150g (5oz) onions
5 garlic cloves
2½cm (1in) piece fresh ginger
2 teaspoons whole brown mustard seeds
1 teaspoon whole cumin seeds
2 teaspoons whole coriander seeds
3 whole cloves
2 tablespoons cider vinegar
¾–1 teaspoon cayenne pepper
2 teaspoons bright red paprika
salt and freshly ground black pepper
½ teaspoon ground turmeric
550g (1¼lb) boneless pork shoulder, cut into 2½cm (1in) cubes
corn oil or peanut oil
350g (12oz) waxy red potatoes, peeled and cut into 2½cm (1in) chunks
½ teaspoon sugar
